خصوصیات فیزیکوشیمیایی، فعالیت آنتی اکسیدانی و ویژگی‌های حسی کیک اسفنجی تهیه شده از پوست آلوی سیاه و اسیدسیتریک به عنوان جایگزین آرد گندم

چکیده
مقدمه

پوست آلوی سیاه ماده فرعی حاصل از فراوری آلو و حاوی انواع مختلف ترکیبات مغذی است که می‌تواند جهت تولید فراورده‌های غذایی و یا بهبود کیفیت آنها به کار برده شود.

مواد و روش‌­ها

در این تحقیق اثر پودر پوست آلوی سیاه (5، 10 و 15%) و اسید سیتریک (0، 1، 2 و 3%) بر خصوصیات شیمیایی (رطوبت و pH)، ظرفیت آنتی اکسیدانی، ویژگی‌های بافتی (سختی، چسبندگی، پیوستگی، صمغیت، خاصیت ارتجاعی و فنریت) و خواص حسی (رنگ، طعم، بو، سختی، چسبندگی، تخلخل، فنریت و پذیرش کلی) کیک اسفنجی با استفاده از روش آماری فاکتوریل و در سطح 5% مورد بررسی قرار گرفت.

یافته‌­ها

افزایش درصد پوست آلوی سیاه و اسیدسیتریک باعث افزایش ظرفیت آنتی اکسیدانی، رطوبت محتوی، امتیاز رنگ و پذیرش کلی نمونه‌ها گردید. با افزایش درصد پوست آلوی سیاه کلیه پارامترهای بافتی افزایش یافتند. بر اساس نظر ارزیابان نمونه کیک اسفنجی حاوی 15% پوست آلوی سیاه و 3% اسید سیتریک به عنوان بهترین نمونه شناسایی شد. از دیدگاه ارزیابان کیک اسفنجی حاوی پوست آلوی سیاه می‌تواند به عنوان یک محصول جدید قابلیت مناسبی داشته باشد. روش رگرسیون حداقل مربعات جزئی توانست به خوبی رابطه بین ویژگی‌های حسی و بافتی را بیان کند.

نتیجه­‌گیری

تولید کیک اسفنجی پوست آلوی سیاه علاوه بر غنی‌سازی و بهبود کیفیت کیک، باعث استفاده بهینه از ضایعات فراوری آلو می‌شود که می‌تواند از دیدگاه رشد صنعتی و اقتصاد کشاورزی اهمیت فراوانی داشته باشد.

Introduction

Black plum peel is a by-product of plum processing and contains various types of nutrients that can be used to produce new food products or improve their quality.

Materials and Methods

In this study, the effect of black plum peel powder (5, 10, and 15%) and citric acid (0, 1, 2, and 3%) on chemical properties (moisture and pH), antioxidant capacity, texture characteristics (hardness, adhesiveness, cohesiveness, resilience, gumminess, and springiness) and sensory properties (color, flavor, odor, hardness, adhesiveness, porosity, springiness and total acceptability) of the sponge cake with factorial design at P0.05 level were investigated.

Results

Increasing the percentage of black plum peel and citric acid increased antioxidant capacity, moisture content, color score, and total acceptance of samples. With increasing the percentage of black plu

m peel, all texture parameters raised. According to the panelists, the sponge cake containing 15% black plum peel and 3% citric acid was the best sample. From the panelists ' point of view, sponge cake containing black plum peel can be suitable as a new product. The Partial Least Squares Regression was able to well express the relationship between sensory and textural properties.

Conclusion

To produce the black plum peel sponge cake, in addition to enriching and improving the quality of the cake, causes the optimal use of plum processing waste, which can be of great importance from the perspective of industrial growth and agricultural economy.
