بررسی میزان سرب، کادمیوم، جیوه، نیکل و قلع در کنسرو های تن ماهی موجود در فروشگاه های سطح شهر نیشابوردر سال 1396

چکیده
مقدمه

محصولات دریایی نقش قابل توجهی در تامین غذای مردم جهان دارند اما رشد سریع جمعیت و صنعتی شدن باعث ورود آلاینده‌­هایی نظیر فلزات سنگین به آبزیان می­‌شود. هدف مطالعه حاضر بررسی میزان فلزات سنگین در کنسروهای تن ماهی موجود در بازار نیشابور می­‌باشد.

مواد و روش­‌ها

مطالعه توصیفی- مقطعی فوق در سال 1396 بر روی 30 نمونه کنسرو تن ماهی که به صورت تصادفی از سوپرمارکت‌­های سطح شهرستان نیشابور تهیه گردید، انجام شد. هضم شیمیایی نمونه­‌ها به روش هضم مرطوب و میزان غلظت فلزات سنگین با استفاده از دستگاه ICP-OES قرائت شد. نتایج حاصل از آنالیز نمونه‌­ها با استفاده از آزمون­‌های توصیفی (میانگین و انحراف معیار) و تحلیلی( آنووا و کراسکال والیس) با بهره‌­گیری از نرم­افزار SPSS v.18 ، مورد تجزیه و تحلیل قرار گرفت.

یافته‌­ها

میانگین غلظت جیوه، سرب، کادمیوم، نیکل و قلع در نمونه­های تن ماهی به ترتیب 0/6±0/125، 0/118±0/324، 0/11±0/07، 0/127±0/498، 0/624±1/038 میکروگرم بر گرم می باشد. تفاوت معنی­داری بین میانگین نیکل و سرب در 4 نوع تن ماهی وجود داشت. اما تفاوت معنی­داری بین میانگین کادمیوم، جیوه و قلع در 4 نوع تن ماهی مشاهده نشد.

نتیجه‌­گیری

میانگین غلظت فلزات قلع، جیوه و کادمیوم از حد مجاز اعلام شده توسط FAO,WHO کمتر بود ولی مقادیر سرب و نیکل در برخی نمونه­‌ها بالاتر از حد مجاز گزارش شد. بنابراین با توجه به خطرات احتمالی این فلزات سنگین و تاثیر بر سلامتی انسان، پایش مکرر این فلزات در مواد غذایی ضرورت دارد.

Introduction

Marine products play a significant role in providing food for the people of the world, but rapid population growth and industrialization have led to the introduction of pollutants such as heavy metals into aquatic animals, one of the main pollutants of these important food sources.

Materials & Methods

This study was conducted in 2017 on 30 canned tuna fish that were purchased randomly from supermarkets in Neyshabur city. The chemical digestion of the mples was measured by wet digestion and the concentration of heavy as metals using the ICP-OES device. Finally, using SPSS v.16, analytical tests ANOVA and KrusKal Wallis, the presence or absence of significant differences was detected at 95% level (P = 0.05) in tuna fish samples.

Results

The average concentration of mercury, lead, cadmium, nickel, and Tin in canned tuna samples were 0.125±0.6, 0.324±0.118, 0.07±0.11, 0.498±0.127, 1.038±0.624 respectively. There is a significant difference between the mean nickel and lead in 4 types of tuna fish, but there is no significant difference between the mean of cadmium, mercury, and tin in 4 types of tuna fish.

Conclusion

The average concentration of Tin metal, Mercury and Cadmium is lower than the limit stated by the FAO, WHO, but the Lead and Nickel concentrations in some samples were higher than the standard limit. Therefore, considering the potential hazards of these heavy metals and the impact on human health, it is necessary to monitor these metals in foods.
